Turkey Quinoa Chili

Serves 6-8
Container Equivalents (per serving): 1 Red, 1 Yellow, 1/2 Green

1 pound lean ground turkey
2 cups diced sweet potatoes
1 cup diced yellow onion
1 cup diced bell peppers
3 garlic cloves, minced
1 (15 oz) can organic black beans
1 (28 oz) can of fire roasted tomatoes
3 – 4 cups vegetable broth
2 tablespoons tomato paste
½ cup uncooked quinoa
1 tablespoons chili powder
2 teaspoons cumin
2 teaspoons paprika
1 teaspoon coriander
½ teaspoon cayenne
Salt & pepper to taste
Olive oil spray

1. Spray olive oil spray in a large skillet over medium high. Add turkey, onion, garlic, salt and pepper. Cook and stir, until turkey is no longer pink. Stir in chili powder, cumin, paprika, coriander and cayenne. Then transfer to the bottom of a large slow cooker.
2. Add the rest of the ingredients into the crockpot.
3. Cover and cook on high for 3-4 hours or low for 6-8 hours.
4. Serve with guacamole and/or greek yogurt. (Optional)
