1 pound boneless skinless chicken breast, sliced
1 (14.5 oz) can diced tomatoes with green chilies
1 red, orange and green bell pepper, cut into strips
1 large yellow onion, halved and sliced
4 cloves garlic, minced
2 1/2 teaspoons chili powder
2 teaspoon ground cumin
1 teaspoon paprika
3/4 teaspoons ground coriander
1 teaspoon salt
3/4 teaspoon pepper
2 tablespoons fresh lime juice
1. Place canned tomatoes, onions, bell peppers, garlic, chili powder, cumin, paprika, coriander, salt, pepper, and lime juice in a 3-quart slow cooker; mix well.
2. Add chicken.
3. Cover and cook on HIGH heat 3-4 hours or LOW heat 6-8 hours, or until chicken has cooked through and veggies are tender.
4. You can serve these with tortillas (2 tortillas = 1 Yellow), and top with salsa, yogurt, avocado and cilantro (OPTIONAL).
