1 lb large shrimp
2 garlic cloves
2 cups sweet potato noodles
4 cups kale leaves
Salt & pepper
Nonstick spray or coconut oil
1. In a saucepan, spray nonstick spray over medium heat.
2. Add garlic. Cook for about 1 minute.
3. Add sweet potato noodles until soft.
4. Add shrimp and cook for 2-3 minutes, or until they turn pink.
5. Turn heat to low and add kale, stirring until wilted.
6. Season to taste with salt and pepper.
