Scrambled Eggs & Avocado Breakfast Tostadas

Serves 1
Container Equivalents (per serving): 1 Yellow, 1 Red, 1 Blue

2 corn tortillas
2 eggs
1/4 avocado
Hot sauce
Dash of salt & pepper

1. Spray a non-stick sauté pan with cooking spray.
2. Scramble eggs over a medium low-heat until cooked, season with a little bit of salt and pepper. Remove from pan and set aside.
3. Place tortilla in the pan over a medium-high heat and heat about 30 second per side.
4. Top tortilla with eggs, salsa or hot sauce, and avocado.
5. Garnish with cilantro and season to taste with salt and pepper.
