Veggie Quinoa Salad

Serves 1
Container Equivalents (per serving): 1 Yellow, 1 Green, 1 Blue,

1/2 cup quinoa, cooked
1 cup diced zucchini and grape tomatoes
10 medium olives
1 teaspoon balsamic vinegar

1. Cook quinoa according to directions. Let quinoa cool.
2. Add diced zucchini, grape tomatoes and olives
3. Pour vinegar over quinoa.
