Container Equivalents (per serving): 1 Red, 1 Green, 1 Blue
1 lb chicken breast, cut into bite size pieces
4 cloves of garlic, minced
2 cups zucchini, chopped
2 cups grape tomatoes, cut in half
1 cup mozzarella cheese
Salt and pepper, to taste
1. Heat a large skillet or wok over high heat. Spray nonstick cooking spray. Add garlic; stir-fry for 45 seconds. Add chicken; cook for about 6-8 minutes, or no longer pink. Remove chicken from pan.
2. Spray cooking spray to pan; add zucchini. Cook for about 6 minutes. Add tomatoes.
3. Add chicken back to skillet to warm. Add mozzarella cheese. Cook until cheese melts, about 1-2 minutes. Top with basil
