1 cup of whole grain pasta, uncooked
1 pound of boneless chicken breast, cut into 1/2-inch cubes
1/2 teaspoon salt, divided use
1/2 teaspoon black pepper, divided use
2 pints cherry tomatoes, halved
3 garlic cloves, minced
3 tablespoons balsamic vinegar
2 cups spinach, chopped
1/4 cup fresh basil leaves
1 cup mozzarella cheese, cut into cubes
Olive oil cooking spray
1. Cook pasta according to package directions.
2 Spray olive oil cooking spray in a skillet over high heat. Add chicken, 1/4 teaspoon salt and 1/4 teaspoon black pepper. Cook until chicken is no pink. Remove from pan, and set aside.
3. Spray cooking spray again and add tomatoes, garlic, and remaining 1/4 teaspoon salt and 1/4 teaspoon black pepper.Cook for 1 minute, then reduce the heat to low and cook for another 5 to 7 minutes, until tomatoes begin to soften and wrinkle. Add balsamic vinegar and cook for 3 seconds.
4. Add drained pasta, chicken and spinach. Cook until spinach begins to wilt.
5. Turn off heat, and add in basil and mozzarella.
