1 cup uncooked quinoa
1 pound skinless chicken breast, cut into cubes
4 cups of cremini mushrooms
4 cloves garlic, minced
1 tablespoon fresh thyme
Salt & Pepper
Olive oil cooking spray
1. Cook quinoa according to directions. I cooked my quinoa in 2 cups of chicken stock instead of water for more flavor.
2. In a skillet, spray olive oil cooking spray. Add chicken. Season about 1/4 teaspoon of salt. Cook until chicken is no longer pink. Set aside.
3. In the same skillet, once again spray the cooking spray. Add mushrooms. Cook for about 3-4 minutes or until mushrooms browned. Add garlic.
4. Stir in the quinoa, chicken, and thyme.
