Container Equivalents (per serving): 1 Red, 1 Yellow, 1 Blue, 1/2 Green, Teaspoon
2 lb. raw medium shrimp, cleaned, deveined (1 lb = 1/2 Red, 2 lb = 1 Red)
1 tablespoon extra virgin olive oil
3 garlic cloves, minced
1/4 teaspoon red pepper flakes
1/4 teaspoon paprika
1/4 teaspoon chili powder
Avocado or Cheese
1. Combine shrimp in a bowl with olive oil, garlic, paprika, chili powder, red pepper flakes and salt. Toss to combine and set aside to marinade for 15 minutes.
2. Warm tortillas in a skillet over low heat.
3. Heat a skillet over medium high heat. Add shrimp and cook for 3-4 minutes or until shrimp is firm and opaque.
4. Top tortillas with cabbage, shrimp, and avocado/cheese. Top with some salsa and a squeeze of fresh lime.
