Bacon Cheeseburger Quesadillas

Ingredients
1 pound extra lean ground beef
8 slices of turkey bacon (2 slices per serving)
1 small red onion, diced
2 tablespoons Worcestershire sauce
1 teaspoon garlic powder
1 cup reduced-fat shredded cheddar cheese
Salt & pepper, to taste
4 whole-wheat tortillas

1. In a large nonstick pan, add ground beef and onion. Brown over medium-high heat, about 5 minutes. Stir often, breaking up beef, into a crumble. Once browned, pour into a colander in the sink to drain any fat.
2. Add beef back to pan. Stir in Worcestershire sauce, garlic powder, salt and pepper. Add bacon. Reduce heat to low and simmer for 5 minutes. Stir often.
3. Heat a large skillet over medium heat, and lightly coat with olive oil cooking spray. Place a single tortilla in skillet, then spoon 3/4 cup of meat filling onto half of the tortilla and sprinkle 1/4 cup of shredded cheese. Fold the empty half of tortilla over the top. Let cook until the bottom of the tortilla is brown and lightly crispy, then flip and brown the other side.
4. Serve and enjoy!

  1. I’m trying to get the hang of “counting” containers and I am a little confused as to why 3/4 cup of the meat filling equals 1 1/2 red. I understand it is made up of the beef and bacon, but I just assumed since you are putting the same amount on the quesadilla that is the measurement of a red container that it would only count for one. I’m on the lowest calorie bracket so I tend to be stingy with my containers šŸ™‚
