Balsamic Chicken With Veggies

Container Equivalents (per serving): 1 Red, 1 Green, 2 Teaspoons

1 pound chicken tenders
2 cups mushrooms, sliced
4 cups fresh green beans
2 cup grape tomatoes
2 tablespoons raw honey
3 tablespoons balsamic vinegar
2 tablespoons extra virgin olive oil
Juice of 1 lemon
2 cloves garlic, minced
2 teaspoons dried oregano
1/2 teaspoon salt
1/2 teaspoon black pepper
Cooking spray

1. Whisk honey, balsamic vinegar, olive oil, lemon juice, garlic, oregano, salt and pepper. Set aside.
2. In a large pan, spray cooking spray and sauté mushrooms and green beans, until green beans are cooked. Remove from pan and set aside.
3. In the same pan, spray cooking spray and add chicken. Season with salt and pepper. Cook until chicken cooked through on both sides.
4. Return mushrooms and green beans to pan. Add mixture into pan. Stir to combine well. Cook for at least another 2 minutes.
5. Add tomatoes.
6. Serve.
