Blueberry Oatmeal Blender Muffins

Container Equivalents (per serving): 1 Muffin= 1 Yellow, 1/2 Purple, 1/2 Blue

1 cup greek yogurt, plain
2 tablespoons raw honey
2 ripe bananas
2 large eggs
1/2 teaspoons pure vanilla extract
2 cups old-fashioned rolled oats
1-1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 cups blueberries
2/3 cups chopped raw walnuts

1. Preheat oven to 350 degrees F.
2. In a blender, add yogurt, honey, bananas, rolled oats, eggs, vanilla extract, baking powder, baking soda, and salt. Blend until smooth.
3. Gently fold in the blueberries and chopped walnuts.
4. Evenly divide batter among prepared muffin cups. About 1/4 cup each.
5. Bake for 20-25 minutes or until toothpick inserted in the center comes out clean.
6. Transfer muffins to rack and cool.

  1. the oats are missing in the steps but im assuming you had them in the blender with others? I made some tonight and missed the oats XD hopefully theyll taste good lol

  2. I was really excited about these muffins but I hate to report they are just not good to me at all. I’m 10 days into my third round of the Fix and for the most part I find the recipes from Pinterest pretty tasty. This is one of the few cases I’d rather cheat and try adding 1/2 cup of sugar to this recipe and mark off an additional bonus/cheat yellow container. I ended up with 14 muffins, so that would be roughly 1.5 teaspoons of sugar per muffin. I just don’t think that’s going to derail my results enough to force myself to eat these muffins without the additional sweetness. I’ll be giving it a try, at least!

  3. I made this today and they turned out very salty. I double checked the ingredients each time I put them in, so I have no idea why they’re salty šŸ™ the consistency was a fine and they looked great.
